Roasted garlic butter chicken that’s tender and juicy, baked with a garlic butter spread and fresh herbs to make a tasty classic roasted chicken.


  • 5 lb young chicken
  • 1 stick butter
  • 1 tbsp avocado oil
  • 45 cloves garlic minced
  • 1 tsp pepper
  • 2 1/2 tsp salt
  • 1/2 tsp poultry seasoning
  • 1 1/2 tsp onion powder
  • half a lemon
  • 2 sprigs of rosemary
  • 2 tbsp fresh thyme


  1. Preheat oven to 400. remove gizzards if left inside. rinse out the inside of the chicken cavity and pat down the outside of the chicken with a paper towel. Make sure chicken is dry on the backside too.
  2. Rub chicken with avocado oil or olive oil. with soft room temperature butter, add 4-5 cloves of minced garlic, 2 tbsp fresh thyme, and mix well.
  3. Spread all over the chicken, including under the skin, backside, under the wings, and all around both legs. *Leave a small amount of butter left to add to the chicken the last 40 minutes of cooking.
  4. Mix 1 tsp of pepper, 2 1/2 tsp salt, 1/2 tsp poultry seasoning, and 1 1/2 tsp of onion powder. Mix together and coat the chicken well. Get under the legs, between the wings and sides of the chicken. Place half a lemon and rosemary sprigs inside the cavity.
  5. Place onion slices at the bottom of the baking dish and gently place chicken on top. Place in the oven and bake for 30 minutes. Remove from the oven, and baste the chicken with the drippings. Add leftover garlic butter mixture on top and place back in the oven at 425 for another 40 minutes.
  6. carefully remove from the oven and cut into the leg to ensure the juices run clear. rest for 10 minutes before slicing. Serve with your favorite gravy and side dishes!
